Cheese Stuffed Chicken

4 boneless, skinless chicken breast halves
3 tbsp Velvetta cheese
2 tbsp chopped peppers or chilies
2 tsp minced dried onion
cup melted butter
1 cup seasoned bread crumbs

Flatten chicken to " thickness.  In a small bowl combine  cheese, chilies & onion.  Spread of cheese mixture on each chicken breast.  Roll and secure with toothpicks.  Dip chicken in melted butter & then crumbs.

Place in a greased baking dish.  Cover and bake @ 375F for 50 minutes.  Uncover for 10 more minutes to brown.

NOTE:  You can substitute a beaten egg for the melted butter.  You can add seasonings to the egg/butter instead of the crumbs.  I use seasoning salt & pepper but you can use whatever seasonings you prefer.
