Fettuccine with
Asparagus and Shrimp

1 lb large shrimp, shelled & deveined (500 g)
1 lemon, juice & grated rind
1/4 - 1/2 tsp hot red pepper flakes (1 - 2 ml)
½ tsp salt (2 ml)
16 oz pkg. fettuccine or linguine (500 g)
1 tbsp vegetable oil (15 ml)
1 medium onion, chopped
1/2 tsp salt (2 ml)
1 tbsp vegetable oil (15 ml)
1 lb fresh asparagus, cut in 3" (8 cm) pieces (500 g)
1/2 cup water (125 ml)
1 tbsp soy sauce (15 ml)
In a bowl, mix shrimp with lemon juice, pepper flakes and salt.
Cook fettuccine according to package directions. Keep warm in pot.
Heat oil and stir fry onion, pepper & salt until peppers are tender- crisp.
Set aside in a bowl. In same pan heat oil & add asparagus and shrimp
mixture. Stir-fry until asparagus are tender-crisp and shrimp turn
opaque, about 3 minutes. Stir in pepper mixture and water. Heat
thoroughly.
Toss shrimp mixture with fettuccine and soy sauce. Sprinkle with grated
lemon rind. Serves 4.
