Coconut
Pumpkin Bread

It's Halloween time again. Whether you choose to carve your own pumpkin
and cook the inside, or buy canned pumpkin, the is the time of year when
it is most economical to eat pumpkin. There are many other things you
can make besides pie. Here is one of my favorites.
Ingredients
4 Eggs
1 and 1/3 Cup
vegetable oil
2 Cups Cooked or Canned Pumpkin
2 Cups Flour
One teaspoon each of the following:
Salt, soda, Cinnamon & Nutmeg
Two Packages (3 oz each) of Coconut Pudding & Pie Filling Mix
One Cup Nuts
Mixing
Combine the eggs, oil, and pumpkin and beat lightly. Add
the dry ingredients along with the pudding mix. Blend, then stir in
nuts.
Baking

Pre-heat oven for 10 minutes at 350 degrees and Bake for approx. 1 hour.

This recipe makes 2 regular size loafs (9 1/2 x 4 x 2).
