Microwave Roasted Potatoes
Ingredients
6 red potatoes 2 Tbsps olive oil salt and pepper to taste 1 Tbsp dried parsley
Cube potatoes and put in a microwave-safe dish.
Drizzle olive oil on top of the potatoes, add salt and pepper, and mix well.
Sprinkle the top with parsley.
Cover and cook on high approx. 10 minutes or until the potatoes are
tender.
Serve 4-6 |
