Lemon Rice

1/4 Cup butter or margarine
1 Cup rice
2 teaspoons grated lemon peel
2 Cups chicken broth
1/2 cup whipping cream
Melt the butter on the stove. Add the rice and lemon peel. Stir and cook for 5
minutes. Add the chicken broth, cover, and simmer about 20 minutes, or until the
liquid is absorbed. Add the cream and continue cooking until it is absorbed.
