Apple Streusel Muffins

Topping:
1/2 cup brown sugar (125 ml)
1/4 cup flour (50 ml)
1/4 cup butter or margarine (50 ml)
In a small bowl mix the topping ingredients with a fork. Set aside.
Muffins:
1 1/2 cups flour (375 ml)
1/2 cup sugar (125 ml)
3 tsp baking powder (15 ml)
1/2 tsp salt (2 ml)
1 egg
1/4 cup milk (50 ml)
1/4 cup oil (50 ml)
3/4 cup grated apple (peeled) (175 ml)
In a bowl mix dry ingredients. Make a well in the center.
In another bowl beat the egg until foamy. Blend in milk & oil. Mix in grated
apple. Pour into well in dry ingredients. Stir just until moistened.
Fill muffin cups ¾ full. Sprinkle with topping.
Take @ 400F (200C) for 20 - 25 minutes. Makes 12.
