Honey-Glazed Roasted
Vegetables
Ingredients
1/4 cup honey
1/4 cup olive oil
3 Tbs balsamic vinegar
1 clove garlic, crushed
Salt, pepper to taste
4 cups mixed cut up vegetables (red potatoes, onions, carrots, green peppers,
red peppers, zucchini, etc)
Mix all ingredients (except the vegetables) to make the honey sauce.
Put the vegetables in a casserole dish.
Using a pastry brush, cover the vegetables with the sauce.
Bake for about 30 minutes at 400 degrees. Stir often.
