Ingredients 1 Package Refrigerated Cookie Dough (Sugar Cookies) 1 Large Package Vanilla Pudding Mix (Non-Instant) 1/8 teaspoon Salt 2 - 20 Ounce Cans Crushed Pineapple 1 Tablespoon Butter or Margarine Mixing Instructions Slice Cookie Dough into 1/4 inch slices. Line the bottom of a 12x18 inch cookie sheet (ungreased) with the cookie dough. Bake at 375 degrees until lightly browned (9-12 minutes). Meanwhile, combine pudding mix and salt in saucepan. Drain juice off pineapple and add water to juice to equal 1 Cup. Blend into pudding mix, add pineapple, and cook over medium heat. Stir constantly until mixture comes to a full boil. Stir in Butter. Spread filling over cookies. Let cool slightly than refrigerate. Serving Cut into squares. Garnish with whipped cream sprinkled with coconut. Serves 20-24.
