Frittata  Ingredients 1 1/2 Cups Sliced Zucchini 1 Cup Corn 1/2 Cup Chopped Red Pepper 1/4 Cup Chopped Onion 1/4 teaspoon dried Oregano 1 Tablespoon water 4 Eggs 1/2 Cup Skim Milk 1/4 Cup Low Fat Cheddar Cheese  Preheat broiler.  In a nonstick ovenproof skillet combine vegetables and spices.  Cook in water over medium heat until tender.  Blend eggs and milk.  Pour over vegetables.  Cook over low heat until eggs are almost set. Sprinkle with cheese and place under broiler until cheese is melted.
