Save Money and Make Your Own Fast-Food-Type
Chicken Soft Tacos
by Monica Resinger
I love Taco Time's chicken soft tacos, but because money is
tight, I can't go out to eat as much as I'd like, so I created my own chicken
soft tacos and they taste very close to Taco Time's version. I save a
significant amount of money by making my own, not to mention the time and gas to
get there. Here's my recipe.
Chicken Soft Tacos
Serves 4+
4 boneless skinless chicken
breasts
Cooking oil
Seasoning salt
Cumin
2 Cups shredded cheddar cheese
Shredded lettuce
8 flour tortillas
Ranch salad dressing
Hot sauce (if you have extra little packets of Taco Time hot sauce, that really
makes these like Taco Time's!)
Preheat oven to 350*. Place the chicken breasts on a baking sheet, drizzle with
oil, then sprinkle with seasoning salt & cumin. Bake for 20-30 minutes or until
done. Meanwhile, place the cheese and lettuce in serving bowls and heat the
tortillas in the microwave for 1-2 minutes. When the chicken is done, cut into
bite size pieces & place in a serving bowl. To make a soft taco, place a little
shredded lettuce on a heated tortilla & top with ranch dressing and hot sauce to
taste; place shredded cheese and cooked chicken on top of lettuce, then roll the
tortilla buritto style (fold in top or bottom, then roll up from side to side).
