Bananaberry Bombs

Ingredients
1 cup quick-cooking rolled oats
1/2 cup flour 1/2 cup whole wheat flour 1/4 cup wheat germ (or wheat bran)
1/2 cup sugar 1 1/2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1
1/2 cup mashed bananas 2 egg whites (or 2 eggs) 1/4 cup butter or margarine (melted) 1 cup fresh or frozen blueberries
Preheat oven to 375F
Combine oats, flours, wheat germ, sugar, baking powder, baking soda, &
salt in a large bowl. Stir well and set aside.
In a small bowl, whisk together bananas, egg whites & melted butter until
smooth. Add banana mixture to dry ingredients &
mix until just moistened. Gently fold in blueberries.
Spray large muffin tin with non-stick spray (or use paper muffin cups.)
Fill 3/4 full with batter. Bake for 20 minutes or until wooden pick
inserted in center comes out clean.
