Buttermilk Pound Cake
Ingredients
3 cups sifted flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup butter (2 sticks)
2 cups sugar
2 eggs
1 tsp. vanilla
1 tsp. lemon extract (optional)
1 c. buttermilk
Combine the dry ingredients in a separate large bowl and set aside. You may sift
all the ingredients together.
Preheat oven @ 350 degrees.
In a large bowl beat together butter and sugar until
light and fluffy.
Add 1 egg at a time to butter and sugar mixture, beating well after each
addition.
Blend in the extracts to the butter and sugar mixture.
Take the flour mixture that was set aside and add to butter and sugar mixture
alternately with the 1 cup buttermilk, mixing well after each addition.
Pour into pound cake pans, being sure to leave enough room for the cake
to rise and come over the sides of the pans. Bake at 350 degrees for about
35 to 40 minutes or until golden brown. Because ovens vary, always check the
cake so it is not over done. You may place a tooth pick in the center of the
cake
to see if it is finished. If the toothpick comes out clean, it is done, if not,
continue
to cook.
